15 min ~ easy ~ serves 1
~ 1 pot of Smoky Mushroom & Miso Future Noodles
~ Large handful of exotic mushrooms (such as oyster or enoki)
~ Small corn on cob, kernels removed
~ Vegan gyoza
~ 1 small carrot, cut into matchsticks
~ Handful of coriander
STEP 1.
Make the Smoky Mushroom & Miso Future Noodles as per packet instructions.
STEP 2.
In a frying pan, heat a little oil and fry the mushrooms. If you like your gyoza pan fried, add these now, alternatively steam them.
STEP 3.
Heat a griddle and blister your corn kernels until they have a nice burnt skin. Or use an un-oiled pan.
STEP 4.
In a large heated noodle bowl add the finished noodles, prepared gyoza, mushrooms, carrot sticks, sweetcorn and sprinkle over your chopped coriander.
