Crunchy veg, smoky tofu and sour lime all in one bowl of incredible Noodz? Yes please. We think this lunchtime speedy pimp is a winner.
15 min ~ easy ~ serves 1
~ 1 pot of Yellow Curry Future Noodles
~ 75g smoked tofu, cubed
~ 1/2 red pepper, thinly sliced
~ 1 baby pak choi, halved
~ Small handful of cooked beansprouts
~ 1/2 lime
STEP 1.
Make the Yellow Curry Future Noodles as per instructions and leave with the lid on to keep warm.
STEP 2.
Add a splash of oil to a hot pan and add your cubes of smoked tofu. Fry for 5 minutes or until the sides are browned. 2 minutes before they are done, pop your sliced pepper into the pan to warm.
STEP 3.
Place your pak choi into a bowl of boiling water to wilt for a couple of minutes - no longer.
STEP 4.
Whilst your pak choi is wilting, pour your noodles in to a warmed bowl, sprinkle over the fried tofu and peppers, then top with bean sprouts. A squeeze of lime and you're done. Enjoy.
